Restaurant air quality is a problem that exhaust hoods alone don't fully solve. Cooking odors, grease vapor, smoke, and volatile organic compounds (VOCs) from cleaning chemicals migrate from the kitchen into the dining room — affecting guest experience, staff comfort, and in some cases triggering complaints to local health departments. A commercial air purifier placed strategically in a restaurant addresses what the ventilation system misses, filtering residual particles and odors at the room level.

Air Purifiers That Handle the Restaurant Environment

Restaurant air contains a unique combination of contaminants: ultrafine grease particles, combustion byproducts from gas cooking, cooking odors (acrolein, aldehydes, acetic acid), CO2 from high occupancy, and VOCs from sanitizers and degreasers. An air purifier effective in a restaurant needs both HEPA filtration for particles and activated carbon filtration for odors and gases — HEPA alone won't touch cooking smells.

Activated Carbon for Cooking Odors and VOCs

Activated carbon is the only filtration media that adsorbs gaseous contaminants — odors, smoke compounds, formaldehyde, and cleaning chemical off-gassing. HEPA Filtration for Dining Room Air Quality

In the dining room, HEPA filtration removes fine aerosols, dust, and the submicron particles generated by cooking. Post-COVID, many restaurant operators have also implemented HEPA filtration as part of their indoor air quality (IAQ) strategy for guest confidence. How Many Units Does a Restaurant Need?

ASHRAE recommends a minimum of 4–6 air changes per hour (ACH) in restaurant environments, with higher rates recommended for kitchen-adjacent spaces. To achieve this with standalone purifiers, calculate your room volume (length × width × ceiling height in feet) and divide by the unit's CADR (Clean Air Delivery Rate) to find the required run time per air change. Most restaurants with dining rooms up to 1,500 sq ft need 2–3 units placed near kitchen pass-throughs and seating areas.
